I love this salad: roast some pumpkin pieces and some red onion wedges, add pinenuts to the pan to roast them as well when the pumpkin is nearly cooked, remove from the oven, toss in some spinach leaves and some feta cheese pieces, it will wilt the spinach slightly and melt the feta. Season with pepper and salt, and dress with a balsamic vinegar and olive oil dressing. Delicious!

Autumn for me means the start of the rugby season for my sons! I've just come home from watching my youngest(17) play! First game of the season and he's got a cut lip and torn ear!!

I'd love to work with some Jump Rope fabric! My favorite fall activity is our fall vacation...we always wait until the hot summer is over. A great advantage is smaller crowds and beautiful fall foliage. I also LOVE making pumpkin rolls.

My favorite fall activity is going to the apple orchards. I found one that I just LOVE a few years ago and now look forward to heading out there every single year at least twice, if not more. It's a little over an hour from here but it is THE best orchard around and I pass about four others to get to them. MUST have my Honeycrisp apples or Fall just feels 'off'. And of course, then I must make one of my over-filled apple pies for hubby. The other Fall thing is to make a HUGE pot of my 'famous' chili recipe I created a few years ago after hearing two of my kids beg me to write it down. I've been making and pefecting it for the past 20 yrs and never used a recipe. Both of those boys told me they were afraid they would never have Mom's chili again once I am gone if I don't get that thing written down. It took me forever to figure out the measurements and many batches. Now though they both have it and are happy. The one makes it all the time and his fiancee said she hasn't ever had a chili that she liked but mine she LOVES so that made me smile. She calls to tell me almost every time they make it which is funny.

ReplyDeleteFall is my favorite season by far. I love apples, making applesauce, taking photos outside of the changing leaves, wearing sweaters, going on walks, and on and on. I even found a recipe for Pumpkin Spice White Hot Chocolate that I can't wait to try as soon as the temp gets below 60. If I could live somewhere that is perpetually fall, I would. I love it!

I live in Florida, and am originally from the beautiful, 4 season Catskill mountains, so at the beginning of September we usually change our patio tablecloth to something in Autumn colors, and I put out (fake) pumpkins and gourds, and surround them with (pretend) Fall leaves. Then it really FEELS like September~!

ReplyDeleteWhen autumn comes I love a good spicy lentil or pumpkin soup but as you're sick of purees how about some tasty spinach and feta cheese pie? I love it but can't afford the spinach out of season!
I use a pack of filo pastry brushed with a little olive oil. For the filling I beat up 4-5 eggs and mix with 1/2lb pack of feta and a couple of ounces of grated cheddar. Season with pepper and dried oregano. Add a pound of spinach already wilted and grate in 1/2 a nutmeg. Cook 30-40mins in med-hot oven 180-200 Celcius.

ReplyDeleteMy favourite: Creamy polenta with roasted field mushrooms, beetroot and zucchini (squash?). Drizzle with a little pesto mixed with good olive oil and freshly grated parmesan cheese. Should be soft enough to eat next week. Get well soon, I lost 6 kilos when I had mine out. Beats weight watchers!
ReplyDeleteoh fall is my fav season :) all my kids b-days are in the fall so b-day cake is on the menu, 3 of them LOL but my fav thing to eat this time of year is soups and stews. they are just so easy and allow me to enjoy being outside more. heres one for you.... chicken broth, chicken breast, cream of mushroom soup, brown gravy mix, 1 potato, carrots, fav mix of seasonings, 1/4 of onion, 1/2 - 1 cup of fav peas...all in a crock pot and let it cook all day, serve with rice if you want or just with your fav warm bread :) feel better and thanks for sharing
