With ALL this fantastic weather, I had to grill! There is something about a grill that just smells like good weather and sunshine:o)
I threw onions, peppers, and fresh basil onto the grill { using a special grill pan}until they were perfectly done then added that to angel hair pasta with olive oil sauteed garlic and grated Pecorino Romano. The finishing touches were fresh tomato, a little more fresh basil and grated Romano. OH MY GOSH!!!!! YUMMMMM!!!!

ReplyDeleteI'm trying this recipe tonight for the first time. Not sure how excited my kids will be, but I'm excited to try something new. I will give them permission to remove the sundried tomatoes if they don't want them, and I think otherwise it could go over okay.

ReplyDeleteDamn, too late for dinner with you guys lol I had Spanish Vegetables - 1 red onion sliced, 2-3 cloves garlic crushed, 1 red pepper sliced, 1 yellow pepper sliced, 1 courgette cut into quarters then 1" lengths, throw in frying pan with a little olive oil and a good pinch of chilli flakes and cook down, then add 2-3 fresh tomatoes chopped and a good pinch of mixed herbs. When cooked (2-3 mins after tomatoes are added) clear space in the pan and crack in 1 egg per person. When eggs are cooked as you like, serve.
